I Love Avocados

Molcajete 1Avocados are an extraordinary fruit. The avocado leads all other fruits in beta-carotene and exceeds the banana in potassium. It contains more protein, potassium, magnesium, folic acid, thiamin, riboflavin, niacin, biotin, pantothenic acid, vitamin E, and vitamin K per ounce than any other fruit.

So, when Maura Hernandez of “The Other Side of the Tortilla” blog invited me to an “I Love Avocados” Live Party with a bunch of other Latina Bloggers, I jumped!

First of all, I love hanging with my sisters, especially those who love food. Better yet, Maura was making all kinds of wonderfulness with Mexican avocados – guacamole with mango and pomegranate seeds, guaca-hummus, a spicy molcajete de salsa verde con queso fresco y aguacate (pictured) and for dessert paletas de aguacate – avocado popsicles! Super rico!

Molcajete 2We foodies find inspiration for our dishes everywhere. Maura found hers at a restaurant in Mexico City. She loved the molcajete so much she came home and made it for us! Tweak however you want. I’m sure your taste-testers will thank you.

She made them with avocados, coconut milk and sweetened condensed milk. Go easy on that last ingredient. You want to taste the avocado, not hide it.
